Mediterranean Frittata

This is a very simple dish to make and is extremely satisfying. I normally eat it cold with some salad, but it can be equally enjoyed hot as well. It is an excellent combination of protein and complex carbohydrates.

Mediaterranean Frittata ready in just 15 minutes (serves 2):


1 tablespoon olive oil

1 onion sliced

1/2 red pepper diced

1/2 green pepper diced

2 medium tomatoes

4 eggs

2 tablespoons live natural yoghurt

2 tablespoons water

1 teaspoon mixed herbs

black pepper & salt

8 black pitted olives


Heat the oil in a frying pan and add the onion and diced peppers. Cook gently until softened. Add the tomatoes and cook for another 2-3 mintues.

Break the eggs into a bowl and add the yoghurt, water, herbs, salt and black pepper. Mix the ingredients well. Pour the mixture over the vegetables in the frying pan, stirring gently to thelp the egg mixture get under the vegetables. Scatter the olives over the top. Cook gently on a low heat until the bottom is firm and lightly brown. Be careful not to let it burn.

To cook the top, put the pan under a grill for 4-5 minutes until lightly brown.
